Our pizza is made with Hokkaido wheat flour, water, and Sicilian salt yeast, kneaded and fermented for a long time to create the dough, which is then baked at over 400 degrees in a wood-fired oven sent from Italy. We are particular about using domestically produced wheat flour, resulting in a dough that is chewy yet melts in your mouth, with a gentle sweetness. Additionally, we use mozzarella sent by air from the Campania region of Italy, sweet tomato sauce, and fragrant organic oregano from Sicily, making each ingredient carefully selected for our pizza. Compared to the full-bodied Brunello di Montalcino from Tuscany, this wine features fruity aromas and a soft mouthfeel. It is a wine with scents of violet, cherry, and plum that arise from 10 to 12 months of aging in French barriques and oak barrels, offering a soft taste.
Tuscany / Red Wine Full-bodied with a brick color and deep ruby red. Aromas of ether and a hint of vanilla. Flavors reminiscent of licorice, spices, and tar. A soft and concentrated wine with a velvety texture.
Variety: Trebbiano Region: Emilia-Romagna. As the name 'Lars', which means 'seagull' in Latin, suggests, it is a dry type with a fresh and refreshing taste. It is also recommended as an aperitif.
Variety: Falanghina Region: Campania Sweet fruit aromas like apple and pineapple. It has a refreshing quality that envelops the palate, with the scent of exotic fruits returning. It has a balanced acidity and elegance.
Variety: Chardonnay Region: Sicily. A smooth and elegant taste harmonized with nuances of vanilla and ripe fruit. The mellow and pleasantly balanced acidity pairs well with meals, making it a delightful glass to enjoy with food.
Variety: Grillo. This wine is made from 100% Grillo, a native variety from Sicily. It has a vibrant citrus character with hints of lime. It also has a mineral feel and richness, making it a good match for fish dishes and wood-fired meats.
Quality: Aglianico State: Campania Aromas of blackberry and ripe black cherry. Pleasant spiciness and hints of vanilla. The taste is smooth with structure, and the tannins are supple.
Variety: Merlot Region: Sweet aroma of Sicilian berries and plums, with a smooth and rounded, rich flavor and pleasant, silky tannins make this a high-quality wine.
