Created to let people enjoy shrimp deliciously. Underneath the sea urchin, enhanced by the texture of Hokkaido-sourced botan shrimp and shrimp broth, lies Inaniwa udon mixed with fish roe. Combined with the flavor of the caviar on top, it offers an unparalleled deliciousness. Served as a course dish.
The small rice balls seasoned with red vinegar create a perfect harmony with the toppings. They dissolve gently in the mouth, disappearing beautifully along with the toppings, leaving a remarkable aftertaste. The signature piece, lavishly using seasonal crab and sea urchin, is served directly by the chef.
The highlight of sushi, tuna is sourced from the prestigious wholesaler 'Yama Ko'. The way it is prepared enhances the harmony with the sushi rice, making it exquisite in taste and aroma. The fatty toppings like toro are served in the first half of the course, while shellfish and marinated items are served in the latter half, balancing the overall experience, which is the intention of 'Matsuzaki'.
