Our chicken rice uses old hen instead of young chicken. Compared to young chicken, old hen is tougher, but it is actually very flavorful, and the chicken broth seeps into the rice, making it very delicious. To make it easier to eat, we mix minced old hen with burdock, dried shiitake mushrooms, and carrots, which completes the filling for the chicken rice.
