Game meat often carries a negative impression, but the game we offer is carefully selected game that has been handled by hunters and artisans from hunting to processing and aging. Properly processed game meat will dispel any negative impressions. We invite you to experience it at least once! We stock about 20 types of game meat annually, including deer and wild boar. Enjoy the differences in flavor based on the region and season.
All fish delivered by the chef and fisherman are caught using a single hook. After being caught on the boat, they are immediately dispatched, bled, and depending on the species, internal organs are processed as well, then chilled thoroughly with seawater ice before delivery. They fish for seasonal fish throughout the year, traveling to places like Mishizaki, Hikanagashima, Wakasa Bay, and Owase Toba. They also fish in rivers, such as the Mase River and Itadori River, for companion fishing. Wild sweetfish are also available.
The fresh fish caught from the traditional fixed nets of Wakasa Bay is shipped directly from the chef's trusted supplier. The fish is selected by the supplier's expert eye from the catch of the following day after the order is placed, and is properly processed before delivery. The photo shows the situation on the day of the catch, sent by the supplier.
The organic vegetables grown in the chef's family home in Seto City, Aichi Prefecture, receive many happy comments like, 'The vegetables for the salad have a very rich flavor!' This handmade pasta requires a lot of effort to fold thoroughly, but the aroma of the wheat and the way the pasta sauce clings to it are different from pre-made products. We offer not only the common fettuccine but also thin spaghetti, short pasta, extruded pasta, ravioli, and other types of pasta that change daily based on the preparation situation. We often receive questions from customers such as, 'Are there menu options that children can eat?' or 'Do you have a children's menu?' As chefs, we also have a 3-year-old and a 1-year-old (as of 2023). To put it bluntly, they do not eat extreme dishes like carpaccio or raw fish, prosciutto, or spicy dishes like peperoncino or arrabbiata, but they love and often eat items from the grand menu such as spaghetti with meatballs, carbonara, genovese, cheese risotto, various meat dishes including venison and wild boar, fish dishes like acqua pazza and roast, as well as parmesan cheese, olives, and homemade gelato. I believe there may be preferences and dislikes for your children, but I hope this information is helpful.

Recreating the carbonara I had in Rome. Made with homemade pancetta, eggs, and Pecorino Romano (sheep's cheese).
Uses organic basil made by the chef's father. Now a world-famous Genovese dish. Originally, it has a history of being a field dish made with vegetables picked in the square. It is a traditional sauce made with plenty of basil, nuts, cheese, and olive oil.

We recreated the spaghetti that the two amusing thieves fight over in that famous movie! 'Polpettini' refers to Italian meatballs. The movie is set in central Italy, a city of gastronomy♪ In Emilia-Romagna, San Leo, and various regions of Italy, the methods and recipes differ completely. We have also noted down about 15 recipes for Polpettini from regions outside Emilia-Romagna.

Deer meat is red and low in fat, making it low-calorie and high in protein, which is popular among women. It is recommended for those trying game meat for the first time. The further south you go, the smaller and more tender the deer become. Even the leaner deer from Miyazaki Prefecture and Nagasaki Prefecture have more fat, resulting in a juicy and moist flavor. Available cuts include tenderloin, loin, and thigh.
During hibernation, it is called white meat due to its rich fat content, but it also has a firm red meat and is juicy. The meat is so elastic that it is hard to cut with a knife when roasted. While it is delicious in stews, it is difficult to fully enjoy the bear-like flavor with a texture similar to beef. This dish was created by a chef who desperately wanted to grill it deliciously, and it was featured on TV. Please enjoy!
Steak Ash is a hamburger made without any binders.
We have procured one cub of the endangered Asian Black Bear. The meat is surprisingly soft and has a gentle flavor, unlike what you would expect from a bear.
This is a piglet sourced from one head, captured in a box trap, with 30mm of fat. It had an unexpected amount of fat for a summer pig. The diet of the pig has also changed, resulting in a sweetness in the fat and a richer flavor in the red meat. It will be served entirely roasted.
The Kyon, a Formosan deer, is breeding in Chiba Prefecture. It is a deer the size of a Shiba Inu, with tender meat that is very delicious. One has been procured.
The Hakubishin was once a natural monument. Now it has increased in number and is captured as game meat. It is quite difficult to catch, and it took about two years from the request to the arrival. Many people say that Hakubishin meat is the most delicious meat.
The badger, which has been enjoyed as delicious meat since the Sengoku period. It is said that the meat given by Oda Nobunaga to Tokugawa Ieyasu was not raccoon, but badger. It has good fat content and is said to be white meat, a sweet and delicious game. Roast 100g for 3000 yen, served with homemade pancetta pasta.

This is the first shipment in 5 years. This time, we have the 'Hooded Crow' from Kaga District, Okayama Prefecture. It was sent by a hunter who also provides soft-shelled turtles and nutria. We received 5 crows, which are only about 300 birds available in the market each year. The 'Hooded Crow' is herbivorous and differs from the omnivorous crows found in urban areas, as it damages crops and orchards. They are captured together in a large cage and processed one by one using a net. I found them to be very delicious, and I believe they are the tastiest among birds. The meat texture is similar to that of a muscular pigeon!
The sea lion that we received many inquiries about from customers is back in stock! It has a texture similar to beef, but it has a scent like mackerel from the meat. I think it has no peculiar taste and is suited for Japanese preferences. Male headshot.
