Born on July 7, 1982, in Komatsu City, Ishikawa Prefecture, graduated from Osaka Tsuji Culinary School. After working at a local hotel, he went to Spain. He honed his skills at several Michelin-starred restaurants, including Restaurante Alameda, Fonda Sala, Restaurante Neichel, and El racode Can Fabes. After returning to Japan, he worked as a chef at a Spanish restaurant in his hometown of Ishikawa and opened FERMiNTXO on July 7, 2011. Although the concept of a hidden Spanish restaurant in Nishiazabu may seem intimidating, the interior is a very calm space. With tables intentionally set without tablecloths, everyone can relax and enjoy their meal at Fermintxo. However, while the atmosphere is casual, the cuisine is authentic. The skills of chefs trained in renowned establishments like Restaurante Neichel and Can Fabes in Barcelona are fully showcased throughout the dishes. A variety of exquisite dishes that elevate seasonal ingredients from all over Japan in a Spanish style. Paired with an extensive selection of over 2000 wines, you can fully enjoy the ambiance as if you were traveling in Spain.
