Yamagata, Higashine Junmai Alcohol 15 degrees - 12 five-step brewing. Normally, sake is brewed using a three-step method (where water, koji, and steamed rice are added in three separate stages to complete the mixture), and after about one month of fermentation, it is pressed. However, the five-step brewing method adds rice that has been turned into a porridge-like consistency before pressing, which is a technique to restore sweetness.
Yamagata Tsuruoka Special Junmai Alcohol 15 degrees - 6.5 to - 7.5. Brewed using the method established in the late Edo period, with ten stones of rice and ten stones of water. This special junmai sake is brewed with a rich method that uses 10 to 20 percent less water than currently used, arranged in a modern style.
