The characteristics of the manufacturing method, which is particular about traditional brewing methods such as black koji mold and first fermentation in jars, are also reflected in the quality of the sake. By using black koji, it results in a rich and full-bodied sake, and by using first fermentation in jars, it is influenced by various microorganisms, resulting in a complex aromatic sweet potato shochu.
The shochu first released in 1916 by Yoshisuke Enatsu, the founder of Kirishima Distillery, is made with 'black koji' fermentation. The history of Kirishima Distillery began with black koji shochu. 'Kuro Kirishima' recreates the flavor of the original black koji shochu using state-of-the-art equipment and our unique brewing methods. The deliciousness produced by black koji lies in its rich sweetness and crisp finish. This exquisite taste is crafted from Kirishima Distillery's long-standing tradition and exceptional techniques.
The carefully selected sweet potatoes are combined to create the shochu 'Satsuma Black Tanabata,' brewed with great care and spirit. The sweet potatoes used are the carefully selected 'Kogane Sengan,' and it is brewed with a particularly flavorful black koji. The rich and expressive flavor unique to black koji pairs excellently with water or hot water. After aging, it has developed a thick taste with a lingering hint of bitterness and a syrupy sweetness. This is a rich and mature sweet potato shochu that showcases the brewer's dedication.
The charcoal-grilled sweet potato shochu 'Demon Fire' uses 'Tanegashima Purple Sweet Potatoes' grown by contracted farmers on Tanegashima Island in Kagoshima Prefecture, which are carefully grilled over homemade charcoal for an extended period. Typically, sweet potato shochu is made by steaming sweet potatoes, but 'Demon Fire' enhances sweetness and aroma by using charcoal-grilled sweet potatoes. It offers a fragrant and rich flavor that fills the mouth. This aged charcoal-grilled sweet potato shochu is not only recommended for shochu enthusiasts but also invites a unique drinking experience that women will enjoy.
The 'Ikokukata' <Red> is a genuine shochu made from 100% red sweet potatoes, using only red sweet potatoes (Kintoki) from southern Kyushu as the raw material, including sweet potato koji. It features a rich aroma and a smooth, refreshing taste characterized by the abundant sweetness derived from the high-quality sweet potato koji.

We have established optimal distillation conditions primarily based on reduced pressure distillation to balance the rich aroma from black koji and the toasty flavor of 100% barley. By being particular about the distillation method, we have achieved a mellow aroma and a sharp taste.
