The soba used in okonomiyaki is made with fresh noodles from 'Isono Seimen', a manufacturer specializing in okonomiyaki noodles. By frying the special noodles until crispy with oil, we create a fragrant and crunchy texture that pairs well with okonomiyaki sauce.
The sauce uses the 'Michan Original Okonomi Sauce' that was completed after half a century. This mild and rich sauce is not an exaggeration to say it is the key to the flavor of 'Michan Sohonten'. It is also very popular as a souvenir.
One of the charms of 'Micchan' is the craftsmen's skill, which can produce up to 800 pieces in a single day.
