A carefully crafted aged dough made with a focus on the taste of mochi-like folk art, using wheat flour, water, and salt, kneaded, rested, and refined repeatedly. It has a beautiful sheen and has been finished into noodles with a chewy texture that goes down smoothly.

Shoburi meat / Negi topped shoburi meat refers to a part of the beef that is rarely available even to locals, taken from a single cow in small quantities. This elusive shoburi meat is expertly blended with beef flesh and fat, and Koi Koi has uniquely recreated Beef Shoburi Yaki.

Evolved into Koi Koi style with egg W/ pork W/ squid tempura meat soba! Using plenty of pork, with 2 eggs cooked to a soft boil!!
