Shoburi meat / Negi topped shoburi meat refers to a part of the beef that is rarely available even to locals, taken from a single cow in small quantities. This elusive shoburi meat is expertly blended with beef flesh and fat, and Koi Koi has uniquely recreated Beef Shoburi Yaki.
