When it comes to Hakodate's specialties, squid is a must! Due to the decreasing catch volume year by year, this dish has become truly precious. We recommend making a reservation in advance. There may be days when it is not available due to rough seas.
An original menu item created in collaboration with black rice from Fukushimacho in the southern region, finished in a steamer right in front of you. The squid rice made with black rice can only be enjoyed at Uo Masa! In 2021, a souvenir version was also developed. It won the highest award at the 65th Hakodate Area Excellent Souvenir Recommendation Meeting and is available for purchase at the register and Hakodate Airport.

【Ruibe】 means 【frozen】 in the Ainu language. At Fish Masa, this popular item is made by marinating squid goro in soy sauce, wrapping it with wasabi and perilla leaves, and then freezing it. Due to being handmade, it may sell out.
Although it is called salted fermented, there are many types of salted fermented in Hakodate. We also offer a tasting of different salted fermented depending on the season, so please give it a try.
Shikabe Town in southern Hokkaido is famous for its cod roe! It is simply grilled.
In Hakodate, there are only a few companies that produce a type of dried squid called 'Kogane'. Among them, our shop uses Kogane from Yamaiichi Foods. We recommend eating it dipped in a mixture of mayonnaise and soy sauce, with a sprinkle of chili pepper!
