A shochu made using Niigata sake yeast and yellow koji, with a 'three-stage brewing' process. By adding sake lees during fermentation, it has a faint aroma reminiscent of ginjo sake.

This is a refreshing shochu made with shiso, a specialty of Shiranuka Town in Hokkaido, and the pure water from the Daisetsuzan mountain range.
We used plenty of Kochi chestnuts, 50% in total, and distilled them slowly at low temperatures to capture their aroma.
