This curry was created with the idea of being delicious on its own and also delicious when eaten with curry. The beef belly is cooked until it is so tender that it falls apart with a spoon, and finished with a demi-glace sauce that pairs well with curry. This beef curry is made using 'Kyoto Beef', a brand of beef from Kyoto. The simplicity of the dish allows the sweetness of the domestically produced beef to shine through. The richness of the domestically produced beef added to the curry is a unique luxury. We use certified 'Kyoto Tanba-Kameoka' black-haired wagyu beef. Kyoto Tanba-Kameoka has clean air and water, abundant nature, but also has a temperature difference of nearly 30 degrees Celsius between summer and winter, making it a harsh environment for the cows. The rigorous natural environment, along with delicious water and air, tightens the cows' bodies and results in a very flavorful meat. The meat quality is determined by the fine fibers and good texture, and it has a sufficient richness due to the moderate fat content to withstand the cold, making it a distinctive feature.
