During the Edo period, whales were landed in Higashikonishi, and the freshest and best parts were transported to the nearest Nagasaki, leading to the development of a whale-eating culture that was not seen in other regions. This includes whale chirping, whale fan, whale bacon, and whale tail feathers.

The origin of Nagasaki's 'Braised Pork Belly' is the Chinese dish 'Dongpo Pork'. It was brought to Nagasaki, which had overseas exchanges during the isolation period. The ingredients and preparation of 'Dongpo Pork' were adapted to Japanese style, becoming a dish known as 'Tobani' in the table cuisine. Now, it has become known as 'Braised Pork Belly' that can be enjoyed on its own. New dishes using braised pork, such as 'Braised Pork Buns', are also famous.

This dish, made by sandwiching minced shrimp and other ingredients between slices of bread and deep frying them, was introduced from china around the meiji period. it is a dish served as a takubuku ryori (table-style dish) in restaurants in nagasaki. the name "hatosi" comes from the cantonese word "ebi toushi." "ebi" means "shrimp" and "toushi" means "toast."
