A pure rice daiginjo brewed with Yamada Nishiki polished to 39%. The aroma and flavor are rich, truly the essence of pure rice daiginjo. It has a vibrant and beautiful aroma reminiscent of melon, and when tasted, it is mild, never overwhelming, which is the true essence and charm of Dassai.
This is a shochu made by distilling sake lees that were created during the production process of Dassai. (It is a limited release available only once a year.) When enjoyed with water, it creates the illusion of drinking a fragrant daiginjo.
