Enjoy the original flavor and sweetness of Sangen pork! With plenty of vegetables and our special dashi for shabu-shabu, excess fat is removed, allowing for a refreshing taste. The dipping sauce, infused with our original dashi, is a satisfying and delicious broth.
Hakata Jidori is a local chicken from Fukuoka Prefecture, born from the idea of making traditional dishes like Chikuzen-ni and Mizutaki even more delicious. Its characteristics include a rich umami flavor that intensifies with each bite, along with a fine texture that provides a delightful crispness.
Our daily soba is prepared using stone-ground buckwheat flour combined with aromatic 'Genpun', made without any binding agents in a 'Juwari' style. The soba dipping sauce is luxuriously made with thick shavings of 'Satsuma Honkarebushi' that have been grilled at a high temperature of 800 degrees using 'Binchotan' charcoal, resulting in a sauce that complements the fragrant soba perfectly. We invite you to try our meticulously crafted soba.
