A seven-course tasting menu curated by the chef, where the flavor profile evolves with each bite. Featuring game meats such as venison and wild boar, along with ingredients available only in season, each dish is carefully crafted with attention to combinations, temperature, and texture. A 7-course meal featuring wine pairings designed to complement each dish. The menu consists of seven dishes crafted around seasonal ingredients—including game such as venison and wild boar—each paired with a wine selected specifically for that dish. As you taste the wines in succession, the impression and perception of the dishes’ flavors will change, revealing new dimensions within each dish. Since we design our dishes and wines as a unified experience, we recommend the wine pairing for guests who enjoy alcohol. (The full 7-glass pairing amounts to the equivalent of 3–4 glasses of wine in total.)
A 7-course meal with wine pairings (half-pairing) to complement each dish. While the menu remains the same, we serve small portions of wine paired with each of the seven courses. The total volume of the seven paired wines is limited to the equivalent of one to two glasses of wine. This option is recommended for those who prefer to enjoy small portions or plan to have about two glasses.
We offer a course meal and wine pairing. To enjoy the food and wine at their best, we have a simultaneous start for the course at 7:00 PM. Please arrive about 10 minutes early. The meal will be served over approximately 2 and a half hours. You can enjoy a course experience that includes the flow and aftertaste of each dish.

A prestigious wine from the Stellenbosch region of South Africa. Made from Chenin Blanc and Muscat of Alexandria bush vine grapes. It has fresh fruit aromas of green apple, lime, and citrus. Crisp and gentle acidity, fruity and soft bubbles. A full-bodied wine with a hint of richness, rich in flavors of lime and citrus, making it a pleasant wine.
Alvarinho made by the Portuguese producer Soalheiro. It uses grapes from a small plot of granite soil at an altitude of about 400 meters, specifically from a section that is more mineral-rich and has lower fertility. It has elegant aromas with a mineral feel. On the palate, it is dry with flavors reminiscent of earth and stone. The fruitiness is less pronounced, and there is a noticeable saltiness from the granite soil along with high acidity, resulting in a long finish.
The grapes are harvested from vineyards in Sonoma County, Carneros AVA, and Monterey County, Arroyo Seco AVA. After undergoing malolactic fermentation, the Sonoma wine is aged for 4 months in American oak (1-year barrels), while the Monterey wine is aged for 8 months in French oak (new barrels). It has rich notes of vanilla beans and almond skins, reminiscent of crème brûlée. There is a soft mineral feel and a subtle oak presence, melting on the tongue. It impresses with a toasty aroma like freshly baked bread and a creamy richness akin to dense butter.
A historic winery established in 1893 located in Alto Adige, Northern Italy. This Gewurztraminer is grown in a rare quartz porphyry soil mixed with crystals at an altitude of 270 to 450 meters. It undergoes alcoholic fermentation in temperature-controlled stainless steel tanks. After that, it is aged for 6 to 7 months with the lees using the sur lie method in stainless steel tanks. It has a rich aroma with hints of lychee and mango, along with spiciness. This white wine features a soft volume of fruit, rich acidity, and a smooth, slippery mineral sensation.
A winery located in Naoussa, Northern Greece. Grown in pesticide-free vineyards at an elevation of 250m facing east. Fermented in stainless steel tanks. This is a slightly sweet rosé wine made from Xinomavro black grapes. It pairs well with food and is also very delicious on its own.
This Primitivo is made by Fatalone in Italy, using organic grapes from vines over 30 years old. It has a rich aroma of ripe fruits with notes of dark cherry and prune, along with a hint of spiciness and toasted nuances. The taste is well-balanced and soft, harmonizing minerals and acidity, with a pleasant fruitiness and a lingering hint of almond.
A natural wine from a young winery in Jura, France. Production of 1,800 bottles. T-B stands for the vineyard plot Trouilot-Batarad. It has a light yet flavorful taste reminiscent of broth and a subtle hint of oak.
