Hinomaru Brewing has a traditional pressing machine called a 'sō' (boat). All the brewers stack bags filled with moromi (fermented mash) inside the sō, and the pressed sake is this 'Soshizuku'. At Hinomaru Brewing, the first pressing of new sake is carefully crafted by all the brewers using this traditional method. The name 'Soshizuku' embodies the joy of celebrating the safe birth of this year's new sake. We deliver the fresh taste unique to undiluted, unfiltered nama genshu directly in the bottle.
