The aroma has a faint fruity impression, while the taste is bold and centered, emphasizing the rich and broad flavor of Yamada Nishiki, known as the king of sake rice. The cuisine of Uonuma often features dishes that can be preserved during the winter, reflecting traditional practices, and thus, dishes with a strong flavor of sweet soy sauce are predominant. It pairs well with rich-flavored dishes such as salted salmon, salted mackerel, and hot pot dishes that are linked to this culinary culture.
