The golden sweetness that surpasses king crab. It is a relative of king crab and is characterized by thorn-like spikes. Due to its golden color, it is called 'Golden King Crab' in English. There are few fishermen who catch this crab, and the catch is limited, which is why it is referred to as the 'phantom crab.' There are also few crab shops that handle this crab, making it difficult to obtain, and those that can only be caught in certain regions are treated as a luxury food.
The melting sweetness nurtured by the northern sea. The Kitamae Crab (Red Snow Crab) is a blessing from the Sea of Japan, raised in the cold sea and rich nature of Hokkaido. Its tender and juicy flesh, born from growing in a harsh environment, is characterized by its elegant sweetness. Each bite spreads a gentle umami, reminiscent of the northern sea's landscape. This dish is enjoyed as shabu-shabu, where the sweetness is enhanced by briefly dipping it in broth.

The 'Northern Limit Pufferfish' has adapted to the cool seas of Hokkaido and has undergone unique evolution.
