We use the highest quality Koshihikari 'Yukitsubaki' grown in Tsunan Town, Niigata Prefecture. This rice is cultivated with care using mineral-rich water, domestic fertilizers, and organic fertilizers. It is crafted delicately by one of the seven recipients of the Diamond Award in the world. Please enjoy this top-quality rice.
We use the highest quality brand eel 'Unasaku Eel' carefully raised in Isshiki Town, Aichi Prefecture. It is fed a special diet that includes krill, garlic, and vitamin E, resulting in a rich and umami flavor close to that of wild eel. With a focus on reduced medication farming (essentially no medication), please enjoy the thick and fatty highest quality brand eel 'Unasaku Eel'.
We carefully prepare dashi every day using the finest Hokkaido kombu, processed katsuobushi without bloodline, and a precise ratio of dried bonito flakes. The dashi, which is made with great care and slowly extracts umami, is clear and has a high-quality finish without any unpleasant odors. The foundation of Japanese cuisine is this first dashi, and the deliciousness of the dishes we serve lies here.
The fresh seafood sourced daily from Toyosu Market becomes the finest ingredients formed by the discerning eye of professional chefs and trusted wholesalers. Sometimes prepared with delicate techniques for quality.
