When I arrived at the auberge, I was first served smooth pudding and herbal tea, which made the fatigue of my journey disappear. Dinner was a French cuisine course, and the aroma from the first dish, baked scallops, lifted my spirits. The tartare of Shinshu salmon was creamy, with an excellent balance of acidity and umami. The poached lobster was sweet, and combined with the rich miso gratin, it made me feel happy. The main dish, wagyu fillet, was cooked to perfection, and every time the scent of black truffle wafted by, I couldn't help but smile.
