In 2021, we aimed to create a wine that embodies the firm texture and the aromas of white peach and apple, with a gradually expanding umami and a gentle taste that seeps into the body. The wine is made from 100% Cabernet Sauvignon sourced from a contracted vineyard. After fermentation and aging in stainless steel tanks, secondary fermentation was carried out in the bottle.

A genuine sparkling wine carefully fermented in the bottle in Niigata, Japan, in 2021. It uses Chardonnay as the base wine (partially aged in barrels). You can feel the richness of the fruit, and the fine bubbles unique to bottle fermentation are beautiful. It has a mature flavor that allows you to enjoy the lingering finish.

The 2022 Anaguma from Niigata, Japan is a rosé that is very close to red. It was crafted to achieve a gentle drinking experience with a dense liquid packed with umami. It is made from our own sandy Sangiovese and Petit Verdot.

2022 Japan / Niigata Miryu Rouge is characterized by aromas reminiscent of berries and soft tannins. It achieves a balance of flavors by blending several types of grapes. It includes Yamagata-grown Yama Sauvignon, Merlot, and Berry A.

2021 Japan / This variety is famous in Hokkaido within Japan. When cultivated in Niigata, it produces a wine with less acidity and abundant fruit flavors. To enhance this, it is aged only in stainless steel tanks, resulting in a rich and smooth wine.

2022 Japan / Carefully brewed from grapes sourced from contracted farmers in Niigata City, Niigata, and Yamagata, aged for one year in barrels. The Merlot made from clay soil is characterized by a slight green note even when fully ripe. To positively enhance its flavor, carbonic maceration was applied during brewing, resulting in a soft yet flavorful core.

2020 Japan / The grapes from our own vineyard in Niigata show the nuances of sandy soil regardless of the variety used to make the wine, but the most characteristic red wine is this Pinot Noir. In 2022, we aimed to create a wine that beautifully expresses the acidity unique to grapes from Niigata and Hokkaido, Japan, allowing it to smoothly flow down the throat and provide a gentle taste that seeps into the body. We used grapes from a contracted farm in Yoichi, crushing them at extremely low temperatures to preserve their quality, and conducted skin contact for three days. Variety: Kerner 100%

Mogura aims to create a wine that spreads smoothly in the mouth and seeps into the body, originating from Niigata, Japan in 2022. The finished wine has a vibrant acidity mixed with a hint of acetic acid. There is a thickness derived from the skin, and the body from the barrel blends together to create a very pleasing flavor. Variety: Chardonnay 100%

2022 Japan / Niigata. This variety is said to be increasingly difficult nationwide, but in Kakuda Beach, we have been continuously harvesting wonderful grapes in recent years. The golden-colored ripe grape berries are incredibly beautiful, and this year, fermentation was carried out using natural yeast derived from the grapes. After barrel fermentation, it was aged in barrels for 9 months.

You can feel the complexity woven from various elements such as the individuality of the grapes, the brewing method, and the type of barrels used. Variety: Chardonnay 100%

Ikkaku is an orange wine made using 2022 Niigata Kerner and Sauvignon Blanc. It is crafted with two types of grapes, aiming for a gentle flavor that seeps into the body. A small amount of Pinot Noir skins is mixed during maceration to add further complexity.
