Chef Fujio (born December 28, 1987, Osaka Prefecture) studied abroad in the United Kingdom at age 15 and later became interested in French cuisine while attending a university in Paris. He trained at the Paris Passage Sankontowa and gained experience at Mirazur in southern France before returning to Japan. In 2012 he worked as a sous-chef at La Cime, and he is currently the owner and head chef of Middle, where he offers his own original cuisine.
