This course features our signature whale harishabu nabe as the main dish, as well as sakana hors d'oeuvres with seasonal flavors.
Leave the whale cuisine to us. This course includes a whale harishabu nabe as the main dish, fresh fish sashimi, hors d'oeuvres with sake, and other delicacies.
As with the Whale Harishabu Nabe, we will provide you with our special seasonal nabe dishes. Please consult with us about your preference for dishes such as albacore and deep-fried fugu (blowfish). Reservations are required.
Only large whales such as minke, sardine, and bottlenose are used, sourced from research whaling. Whale cuisine has been a part of Japanese food culture since ancient times. We hope that our esteemed predecessors will enjoy the 'nostalgia and deliciousness,' while the younger generation will experience the 'unexplored flavors' to their heart's content.
Three types of whale sashimi (kanoko, honkawa, akami) are dipped in a secret broth. It pairs excellently with Kyoto mizuna. Finally, enjoy the fine udon noodles infused with plenty of broth.

Characterized by marbling in the red meat and a good amount of fat. This cut is ideal for sashimi.
The area around the lower jaw. The fat marbling is patterned like a spotted deer.
Whale tongue. Enjoy the melt-in-your-mouth texture of the fat.
The part with the least muscle, such as the back and belly. The meat has a fine texture.
Whale skin. Rich in flavor, the umami spreads in your mouth.
Bacon made from various parts of the whale. Uses 'Unesu Bacon'. You can taste the 'difference' with the right amount of fat and a bouncy texture.
Please be sure to add this to your hot pot with harishabu at least once.

The soft cartilage from the upper jaw of a whale is marinated in sake lees. Of course, it is homemade.
Directly shipped from the renowned Kumamoto region! Premium marbled horse meat. The melting point of horse sashimi fat is lower than human body temperature, allowing it to melt in your mouth. This is one of our proud offerings, alongside whale.

The signature dish is whale cuisine, but we also offer a variety of single dishes that utilize kaiseki techniques, with a rich selection that changes regularly. We accommodate those who may not be very fond of whale, ensuring everyone can enjoy their experience.
