【Kyoto Akachidori】Raised slowly for over 5 months on natural feed only. They grow up in spacious chicken coops where they can move freely. The Kyoto Akachidori raised this way has firm meat, and the fibers of the meat are very fine, resulting in an excellent texture. The fat of Kyoto Akachidori is only half that of regular broilers. Because there is no excess fat, the flavor is rich, making it the best meat chicken. 【Kyoto Miyako Mochi Pork】This is a three-breed pork raised in the Yaguno Highlands in Fukuchiyama City, Kyoto Prefecture. The meat has a light and vibrant color with a fine texture. A standard product of Sōkū. You can firmly feel the deliciousness of the rice, yet it is a clean sake with a light aftertaste.
With a soft mouthfeel, it has a rich flavor that feels slightly sweet even when dry. The brewing water is ultra-soft natural water. It is one of the representative sakes of Tango, carefully crafted with both rice and water.
This is a pure rice daiginjo made with 50% polished Yamada Nishiki, originating from the birthplace of Yamada Nishiki in Hyogo Prefecture. The subtle gas sensation is fresh and pleasant, while the acidity and bitterness create a refreshing feeling.
