This delightful vegetarian dish starts with a blend of minced potatoes, cauliflower, carrot and paneer – homemade farmer's cheese, minced fresh garlic, ginger and green chilies, finely ground red chili powder, crushed black pepper and Roti's finely ground house roasted garam masala. The mixture is formed into small balls and fried in the hot oil of the karahi. Simmering on the range is a savory onion & tomato sauce flavored with cloves, cinnamon, garam masala, red chili pepper, crushed black pepper & Almond. Cream – malai is added to finish the sauce before the kofta – vegetarian balls, are placed in the sauce and simmered together creating a rich & savory dish
Tender pieces of chicken thigh meat are simmered in this unique saucy dish flavored with aromatic fresh healthy herb Methi leaves (fenugreek). Whole cumin seeds and chopped fresh yellow onions are sautéed until golden brown and then we add ground turmeric, finely ground Kashmir red chili pepper & roasted coriander seeds, minced fresh ginger & garlic, fresh chopped green chili and chopped tomatoes. After a bit of simmering yogurt is blended in along with chopped fresh methi leaves. Finally, the chicken is stirred in and allowed to simmer as the sauce thickens into a rich savory masala.
