The tenderloin is a prime cut of red meat. It is the most tender part of horse meat and is a rare cut, yielding only about 10 kg from a single horse.
It is the subcutaneous fat of the neck area. Unlike body fat, it has a "crunchy" texture. It is also known as "cornet fat," a rare delicacy, and only 5 kg of it can be obtained from one horse.
This is the outermost part of the belly meat. It is the meat along the ribs, consisting of three layers of fat and red meat.
