Tagu - Tabika - is a sake brewed with care using small batches and tank pressing at a brewery located right next to the Tagu River in Komono-cho, Yokkaichi. The brewery, Saku - Zaku -, is the Shimizu Seisaburo Shoten, founded in Suzuka in 1869 (Meiji 2), with a history of 150 years. Known as the land of delicious sake brewing, 'Umazake Suzuka no Kuni,' the sake from this brewery was selected as the toast sake for the Ise-Shima Summit.
We have selected various sake from Mie that goes well with the dishes from Fukutaya Saketen in Yokkaichi and NoBuSHo.
A specialty dish made by marinating Duroc breed red pork, which has a sweet yet refreshing taste with a good amount of fat, in special spices and slowly cooking it at low temperature to create an explosion of umami flavor.
