A confident seafood broth made to preserve the umami components. The ingredients used for the broth include Rausu kelp, bonito flakes, Amakusa-produced boiled salt, Hokkaido dried scallops, and fish powder (sardine, bonito, mackerel, and muroaji). No additives are used at all. The broth is made fresh daily using plenty of bonito flakes and Rausu kelp from Hokkaido, resulting in a rich and deep flavor.

Homemade kimchi and versatile spicy miso are prepared under the supervision of a Korean mother, adhering to traditional Korean methods and using carefully selected natural, additive-free ingredients. High-quality Korean products such as fish sauce made from baby sardines, mackerel, and tuna, salted shrimp, and chili powder are used, resulting in a well-balanced flavor that pairs perfectly with shabu-shabu.
Under the supervision of a Korean mother, we repeatedly tested and developed our own blend of spicy miso in-house. This miso has a rich flavor amidst its spiciness, suppressing the unique sweetness of miso, which pairs well with meat and provides a moderate spiciness that warms the body from within and becomes addictive.
The broth soup, simmered with a blend of jujube, goji berries, pine nuts, star anise, Sichuan pepper, ginger, and other ingredients, is finished as a refreshing health soup that allows you to subtly taste the herbal essence when dipping meat into it.
Using kombu from Rausu, Hokkaido, plenty of bonito flakes, and fish powder (sardine, bonito, mackerel, and muroaji), we prepare the dashi only for that day's use. A small amount of light soy sauce is added to the amber-colored dashi, along with sake and mirin to enhance its richness and depth, and then seasoned with kamadaki salt from Amakusa, Kumamoto. Finally, by adding dried scallop, we create a rich and deep dashi with a rounded flavor.

We source our seafood based on the daily catch conditions from main suppliers such as Ozaki Shoten in Naruto Port, Tokushima Prefecture, Kamiyoshi Shoten in Choshi Port, Chiba Prefecture, and Isoya Suisan in Kesennuma Port, Miyagi Prefecture, with a focus on seasonality and origin. We procure natural sea bream that has been tumbled by the currents of Naruto, large clams from Choshi Port that are rich in nutrients due to the mixing of warm and cold currents and the Tone River, and returning bonito and sanma that have fattened in the northern seas, all delivered directly from the ports at their peak freshness. We serve these fish as sashimi and grilled over charcoal, among other preparations.
