Focusing on domestically produced wheat, we have created two types of original blended straight noodles (low water content) and curly noodles (high water content), emphasizing our commitment to quality.
It takes a full two days of preparation to remove the gamey smell and retain the sweetness and umami of the pork bones. The resulting pork bone soup is combined with a homemade ramen tare that has been preserved for 15 years and chicken oil in a perfect balance.
The ramen sauce uses a soy sauce with a strong sweetness unique to Kyushu, combined with a carefully crafted tonkotsu broth and local chicken oil, making it a proud dish.
