The eel for hitsumabushi is grilled instead of steamed, giving it a fragrant and robust flavor. If you prefer the fragrant eel style of Kansai, we recommend hitsumabushi. Enjoy the unique hitsumabushi that only Nodaya can offer, which is different from the traditional kabayaki. The hitsumabushi with 'salt flavor' is our signature dish, grilled to a crisp with rock salt. Additionally, the sauce for the 'sauce grilled' version has been upgraded with a secret recipe. *Please note that we may not be able to serve this on busy days. Please inquire. How to enjoy hitsumabushi: ■ First, divide it into four portions. ■ Start with it as is... ■ For the second serving, add condiments... ■ For the third serving, pour the broth over it for a tea-style dish... ■ For the fourth serving, enjoy it however you like. *The 'salt flavor' hitsumabushi is served with tea instead of broth.

Unlike the Kanto-style grilled, steamed, and broiled eel, the Kansai-style 'Hitsumabushi' is grilled quickly over high heat from raw. The grilling method, heat control, and the sound of the fan are all different. When paired with the firm-cooked Tsuyahime rice and the rich, locally sourced 'Hatsu Unagi' Kanemitsu eel, it becomes incredibly flavorful, almost like butter rice. 'Uraume' can be enjoyed by one person or shared. You can choose between a sauce flavor or a salt flavor. (The photo shows the sauce flavor) Comes with condiments, soup (rock salt grilled with green tea), pickles, and liver soup. *Please note that it may not be available on busy days. Please inquire.
