Since Kokoromusubi opened, the "Dried Conger Eel Overnight" course has always been a popular fish dish. The thick natural conger eel grown in the rough seas of the Sea of Japan has fat and becomes plump and juicy when grilled over a charcoal fire. This powerful flavor attracts many customers. It is our signature dish that our regular customers always order. And for the first time in a course meal, we will offer "Anago no Ippon Nabe" (conger eel cooked over night). What? A nabe of dried conger eel? Actually, this nabe dish is possible only with conger eel, which has fat and a strong flavor. The texture is different from that of char-grilled conger eel, and it is soft and smooth. It is best served with ponzu (Japanese sauce made from ponzu citrus juice).
Nodoguro is a very expensive fish, also known as "white tuna". Since its opening, Kokoromusubi has been using nodoguro, or nodoguro, as it is called, and is a professional restaurant. Ishida, the owner of Kokoromusubi, is a connoisseur of nodoguro at the Toyosu market and purchases the best class of nodoguro of the day. The course is a sumptuous one in which you can enjoy the nodoguro as sashimi or shabu-shabu. In particular, the "Nodoguro no Doron no Shabu Shabu" has been well received by many of our customers. The special broth made from the ara of nodoguro is so delicious that you can't stop drinking it! Zosui (rice porridge) after the shabu-shabu is exceptional! Everyone finished their meal.
