The authentic bluefin tuna from Kyushu is carefully raised in the harsh environment of the Genkai Sea, characterized by low water temperatures and fast currents. As a result, the flesh is firm, with a fine texture and high-quality fat, along with a rich umami flavor. This creates a delicate melt-in-your-mouth experience with its elegant fat content.
This is handmade, freshly made satsumaage that you can enjoy in five flavors: mustard and lotus root, tomato and basil, cheese and corn, edamame and wood ear mushrooms, and squid tentacles with pickled ginger.
We have grilled the flavorful and firm Satsuma chicken (Satsuma shamo) to perfection. By finishing it on a lava plate, it is crispy on the outside and fluffy and juicy on the inside. We have prepared three condiments: salt from Goto-nada, chopped wasabi, and Arima sansho, so please enjoy the differences in flavor.
The Okuhinata Salmon, raised in Nishimera Village in the eastern part of the Kyushu mountains, is characterized by its low fat content, light and delicate flavor, and refined taste without any strong aftertaste.
The selection of three types of domestic horse meat sashimi features lean cuts with a light flavor and sweetness, characterized by a firm texture. It includes the rare cut known as 'Koune' from the nape, which is rich in collagen and has a crunchy texture with a sweetness similar to fatty tuna, as well as the tender and finely textured 'Hiré'. You can enjoy a luxurious tasting experience.
