‘Toyo’ has been continuously produced as a high-class product representing ‘Matsu no Tsukasa’ for a long time. It is made using Hyogo Prefecture's special A district rice, Yamada Nishiki, polished up to 45%. Delicate fermentation management of the small-scale mash is carried out, resulting in a carefully brewed standard Junmai Daiginjo of ‘Matsu no Tsukasa’.
This sake has a clear taste with a refreshing mouthfeel. It can be enjoyed cold, at room temperature, or warm. It pairs well with sashimi.
