This sake, developed in collaboration with the blender from Kurata Sake Brewery in Ishikawa and AP Company, is a blend of one type of junmai sake characterized by its acidity and aroma, and two types of junmai daiginjo sake. Each season brings a different expression: in spring, the new sake 'Namazake'; in summer, the refreshing 'Hiire' which has been pasteurized; in autumn, the matured 'Hiyadori'; and in winter, the 'Aged' version of the spring's Namazake. This special sake can be enjoyed with fish dishes, as well as a variety of Japanese cuisine and seasonal dishes.
