We offer chicken 'white liver' and pork liver. Our recommendation is the chicken 'white liver.' It has a rich flavor similar to foie gras, with minimal gamey taste, and is said to be extremely rare, as only one can be obtained from hundreds of birds. Freshness is key for the meat. By grilling fresh meat instead of using frozen, juices burst out with every bite. We carefully skewer fresh meat sourced daily at our shop.
