The key to its deliciousness is sourcing exceptionally fresh senmai. There is nothing else. The safety point is to heat sterilize at a core temperature of 75 degrees for at least 1 minute. Heating sterilization will somewhat diminish the unique texture of senmai. Therefore, we need the crunchy senmai that is processed on the same day.

In typical motsunabe specialty restaurants, the common method is to add raw offal into cold soup and cook it, known as the 'pre-addition method.' However, this causes the unique flavor of the offal to transfer into the soup. Our motsunabe adheres to the basics of cooking by adding the offal after the soup has boiled, known as the 'post-addition method.' The resulting soup is clear and free of off-flavors, allowing you to enjoy the rich flavor of the offal at its best. We also offer a single serving of 'Motsunabe Single' for 2800 yen.
