Mr. Nagai, who is originally from Hokkaido, chose a career in cooking based on the experience of delighting his family with dishes he made as a child. After honing his skills at a hotel in Sapporo, he moved his base to Hakodate. He joined the Hakodate Beer Hall in 2016; his solid technique and sincere attitude were recognized, and he was appointed sous-chef in 2018. He now devotes himself to creating dishes that make visitors smile by showcasing the appeal of local ingredients.
