Mr. Ito serves as chef and develops French cuisine that draws on sensibilities from Kutchan Town, Hokkaido. After graduating from vocational school, he honed his skills at La Sante and Optunir K, and was appointed chef in 2025. With a foundation in classic techniques combined with contemporary expression, he pursues dishes that embody made in Hakodate. He is a proven talent who continues to be featured in Gault & Millau.
