The dried fish, which can be said to be the essence of the dried fish shop, is made with exceptional dedication. We have a rich selection of top-quality dried fish sourced from trusted wholesalers across the country, including rare and valuable brand dried fish 'Bansuke', which are items that are not easily tasted in everyday life.
The foundation of our dried fish restaurant's cuisine is a thorough commitment to the traditional technique of 'charcoal grilling.' We use high-temperature charcoal that maximizes flavor extraction. The power of far infrared heat thoroughly cooks the ingredients to the core, resulting in a crispy exterior and a fluffy, juicy interior.
Not only dried fish, but we also offer a wide variety of ingredients sourced from all over the country, grilled over charcoal. We use local chicken raised in clear air and pure water for our 'Charcoal Grilled Chicken Thigh,' and we have many seasonal vegetables and seafood, including the melt-in-your-mouth 'Hokkaido Fat Herring.'
