It is said that when people feel spiciness, they are enveloped in a sense of euphoria due to the secretion of hormones. This dish was created with the desire for everyone to feel a tingling happiness over and over again. The popular menu item 'Happiness Mapo Tofu,' crafted through trial and error by a chef well-versed in Sichuan cuisine, makes its appearance at Hyakuraku!
Sichuan pepper provides a punchy numbing sensation 'Ma', while two types of Sichuan chili peppers add a complex spiciness 'La', further enhanced by dried tangerine peel for depth and richness. This homemade spicy pepper creates an irresistible numbing and spicy sensation that can be called the essence of happiness.
Adding a touch of spiciness to the numbing heat of Sichuan pepper is Budou Sansho from Wakayama Prefecture, the best production area for sansho in Japan. It features a soft spiciness and a refreshing sweet aroma.
Using dried tangerine peel for depth and richness, and Sichuan pepper for a refreshing flavor, we have created a taste that leaves a pleasant aftertaste and makes you want to eat it again and again.
Focusing on the spiciness of chili peppers, we used chili oil and Guangxi powder to express a fiery heat. It pairs exceptionally well with rice.
