Dedicated chewy thick noodles in large serving size! Enjoy the highest quality pork shoulder meat and wild garlic!! Detailed description ☟ Recommended reasons - 1 We make it with our own dedicated 'chewy thick noodles'. It is a satisfying large serving size (usually 150g + 75g). We blend only Hokkaido wheat flour such as 'Hokushin', 'Kitano Kaori', 'Yumechikara' with our original blend to achieve the flavor of the earth and the chewy texture. Recommended reasons - 2 Please enjoy the pork shoulder meat, which is said to have the best meat quality. We use Hokkaido pork. When made into chashu, the balance of lean meat and fat is delicious. Preparation method: After simmering for about 4 hours, it is marinated in a special sauce, allowing the flavor to penetrate slowly, and then aged in the refrigerator for at least 1-2 days. The chef slices and serves the ramen for each order. Recommended reasons - 3 Enjoy the whole wild garlic. We use natural wild garlic from Urashiro Town, Hokkaido. Known as the king of mountain vegetables in Hokkaido, 'wild garlic'. It is rich in nutrients such as allicin and sulfides, with 8 times the content of leeks and 4 times that of garlic. 'Wild garlic' endures the harsh winter every year and revives with the first spring. Enjoy the power of the earth.

We have sourced 'Nanatsuboshi' from Mr. Miyoshi, a farmer near Sapporo. It is a shiny rice perfect for ramen rice. According to Mr. Miyoshi's agricultural corporation, they produce water rice in a cycle of once every 5 years. The year after harvesting rice, they grow wheat, followed by soybeans, then beets, and finally potatoes, improving the soil while engaging in planned crop rotation to ship various crops with different harvest periods.

A memorable eating experience. Our chashu is sourced from a producer designated for its top-quality meat, specifically shoulder loin from Yoichi Town, Kitajima Farm - Wine Pork. Kitajima Farm is a farm that focuses on 'creating an environment without the use of drugs' and 'temperature management tailored to pig rearing.' Pigs are inherently prone to illness. To prevent this, we have meticulously created a clean environment. We raise 'Kitajima Pork' with a focus on hygiene, ensuring safety and security. Additionally, we are particular about the feed and do not use any drugs. We raise them safely without antibiotics, providing feed rich in amino acids when they are piglets, and giving them more barley as they grow. Furthermore, the 'Wine Pork' is raised with authentic 'Japanese wine' brewed at a winery in Yoichi Town and sterile underground water, resulting in pork that is rich in flavor and pleasantly sweet. We hope you can enjoy the meticulous efforts of Hokkaido producers.
