The shop located on the floor of JR Kyoto Isetan is convenient to stop by even during your travels, which is delightful. The signature product, saba sushi, releases a wonderful aroma of kelp and a glossy blue-silver color the moment you open the bamboo leaf. The moderately aged vinegared rice has a stringy texture, and the umami of the mackerel combines with a mild acidity, creating a very elegant dish. The finely sliced ginger served alongside adds an accent, leaving a refreshing aftertaste. Since the flavor changes over time, it is recommended to cut it into several pieces and enjoy it slowly. Inari sushi also harmonizes well with the rice and ingredients, and when paired with green tea, it offers a comforting deliciousness.
