Unique aroma and richness created by long-term aging, characteristic of 'Makajiki'

The June lunch nigiri course was as follows.
This was the first time I had tuna at Ki Yuu, and it was delicious.
Since May, the lineup has changed to bonito, chutoro, and trout, with the exception of sakura trout, black sea bass, and masujiki.
Everything is always delicious, but the sea bream and bonito in particular were so impressively matured that we asked for more, along with the red sea urchin.

I was lucky enough to visit Yuan Yuan in October and was able to have the sujiko nigiri, which I had longed for.
After all, this was my third visit and the first time I had the chance to try the sujiko nigiri. It is a wonderful dish with a light flavor and a strong musuko taste.
The classic shijimi, sea urchin buckwheat noodle, and Watari crab are as impressive as ever, and the nigiri are all delicious, but the kingfish, whose rice is covered with liver, is irresistibly delicious.
Here is today's menu
Tsumami
Shijimi Sake

Sea eel with sansho (Japanese pepper)

㐂邑 the other day! (③)
This restaurant has many fans from all over the world for its aged sushi, and it is extremely difficult to make a reservation!
When I was there, you were from Taiwan.
I think it has evolved since the last time I was here 🙄 .
. Rating
⭐️ taste 8 It was more evolved than last time.
I guess I'm finally starting to appreciate the aging process a little better.
⭐️Service 8 Even if you are a newcomer, they will usually take care of you!
⭐️Ambiance 8 It wasn't bad, maybe a little more relaxed if you bring a girl!
⭐️Cosiness 8
The price is reasonable,
⭐️Direction 7 There was nothing special!

September's lunch at Kinpu was as follows. The ingredients are always excellent, but today we were able to enjoy nigiri of the best of the best, starting with a small sea bream of outstanding flavor, followed by a rare whale, and the seasonal sujiko (striped bass).
We were also given a lap cloth with Ki Yuup's name on it.

I went to Ki Yuu for lunch (15 pieces without rice rolls).
The composition was the same as at night, with a succession of nigiri that exploded with flavor.
The seasonal fish, such as sakura trout and shako, were delicious, but the kuromutsu (black sea trout) was also very tasty. The red sea urchin from Yamaguchi was also excellent.

I was amazed at the flavor and richness of the red sea urchin that had been laid out for a week. It tasted different from fresh sea urchin.
The abalone, cut into large, thin slices, filled my mouth with its aroma and had a different impact on my taste buds. The new nigiri with egg omelet matched the sweetness of the rice and was a perfect ending to the meal.
The abalone liver and whale are the only delicacies that you can enjoy only at this restaurant.
The maturity of this marlin is amazing😳!
The stickiness is amazing 👏👏👏👏👏.
It melts in your mouth 🤤!
I was even more surprised to taste a faint coffee flavor at the end as I was tasting it! Amazing ☕️ (lol)
It's average tasting, but if you just want to pop in and have a quick bite, I'd probably go back again 🐟. I think so 🐟.
I think it's almost a members-only restaurant, and since it's located in Futakotama, I don't think I'd make a reservation in advance to visit 💔.
I like that they are very particular about their food, but I wonder if it will be a good thing or a bad thing if they lose the sense of seasonality by pushing out the aging process 💦.
After all, I love tuna, and I love prawns and sea urchins...and I want to enjoy the seasonality! 🌸🌻🍁⛄️
but it's the one and only aged sushi restaurant, so maybe it's possible to visit once? 🍶🍣
