A simple salad as it is. Made with a Japanese-style dressing using sweet onions from Maeda Farm.
We use exquisite onions grown at the family home of our former employee, the BIG BOSS known as 'Shinji'. Sweet onions served with ponzu sauce and quail eggs.
Very crunchy thick mozuku. Served with a refreshing three-part vinegar.
Chicken breast and tenderloin from Jitokko, a breed from Miyazaki Prefecture, quickly blanched and mixed with real wasabi and special soy sauce.
