I stopped by near Baku Onsen and felt relieved by the quiet atmosphere. The freshly ground 100% buckwheat soba has a firm texture and a pleasant mouthfeel. The crisp dipping sauce is well-seasoned with dashi, and just lightly dipping the soba enhances its deliciousness. The Sarashina soba is as white and delicate as snow, and when paired with the accompanying radish, the flavor expands even further. The soba broth is thick, and when combined with the remaining sauce, it brings happiness until the very end. While gazing at the scenery outside the window, I was able to slowly enjoy a bowl that reflected careful craftsmanship.
