This is a restaurant that specializes in 100% buckwheat soba, where you can clearly feel the aroma and umami. There are many varieties, and it's fun to choose from soba of different colors. I ordered cold soba, and it was cooked quickly and served right away. The dipping sauce is slightly sweet, and lightly dipping the noodles enhances the flavor. Toward the end of the meal, the soba broth arrives, which is comforting. There are also rice bowls and warm soba available, so you can enjoy it in various ways.
