The offal made solely from Kagoshima Prefecture's black-haired wagyu was surprisingly sweet and melted in my mouth. The soup had a subtle sweetness layered over the umami of bonito and kelp, leaving a refreshing aftertaste that made me feel like I could drink several bowls. Thanks to the careful preparation, the fat was light, and there was no unpleasant smell at all. The crunchy burdock and plenty of vegetables paired perfectly with the soup, making it hard to put down my chopsticks. The thick champon noodles added at the end were chewy and absorbed the luxurious flavors until the very last bite. The calm atmosphere of the restaurant with jazz playing and the friendly service from the owner made for a comfortable and relaxing experience.
