Koisansui is a hidden gem in Nagasaki specializing in eel and carp cuisine. The exterior of the restaurant has a charm reminiscent of stepping into a Studio Ghibli world, and upon entering, you are greeted by a serene, traditional Japanese atmosphere akin to a ryokan. The entrance has a unique atmosphere that makes me excited. The building has a traditional Japanese aesthetic and provides a calm space. There are private rooms where you can relax without worrying about others. The eel is soft on the inside, while the surface is fragrant and crispy, and the sauce has just the right amount of sweetness with a light aftertaste. You can really taste the umami of the broth, making the rice go down easily. It's reassuring to go after making a reservation, and the staff's response is warm, allowing for a pleasant experience.

Our specialty 'Carp Fillet' is exposed to clean mountain water until just before cooking, resulting in a unique and delicious taste without any strong flavors. Enjoy it with our homemade vinegar miso. Additionally, the carp fillet comes with 'Koi Koku' (miso soup simmered gently for a long time over low heat).
